Does anyone know if the headers from a 260z will swap to a 240z?

And i also need to know if the dash on a 260z can be swapped to a 240z

Square ported headers to square, or round ported heads. Round ported headers only to round ported heads.

Engine displacement makes no difference, only head design.

Panchovisa is right on the headers.

On the dash swap, though, there are differences. All the mounting holes on the top of the dash (near the windshield) should be the same. It's the mounting holes under the center of the dash (where it mounts to the transmission tunnel) that will be different. Location of the fuse block is also different between the 240 & 260 which will require you to make adjustments. You could just swap out wire harnesses while swapping the dash, but then you'll run into problems with connectors on the engine bay harness and the rear wire harness.

Why would you want to put a 260 dash into a 240 anyway?

As for the dash its in perfect condition and on a parts car i recieved with my 240z which has a full face dash cap. And I was pondering swapping it out.

Here is my 2 cents.

If you just want a header buy a MSA, they are good quality product for the price. If you want to get serious and performance try rebello or arizona Z, which is step up but you have to be very specific about how your engine is built to match the header with your engines capability and desired effect. If you want all out race type performance go see Stahl its the best product money can buy.
