I have a 1973 240Z that I am restoring. The tag on the driver's door frame has a stamp of 12/72 and a number 139079.

Can someone tell me what this information is saying about my car?

Thanks.

it's telling you that your car has a build date of 12/72 and has the serial number 139079

Vin codes didn't come out till the 80's (the ones that tell useful information about your car)

so all your car has is the build date and the serial number (basically just an ID number saying your car is number 139079/XXXXXX cars

basically, it tells you absolutely nothing useful for restoring it to original.

You might want to check to see if that number also matches the number on the dash. This same number is stamped onto the firewall. There's another tag under the hood that also shows the number along with the engine number. That will allow you to determine if the engine is original to the car.

The under hood tag MikeW is talking about is on the passenger shock tower, and you will be looking at it up-side down. The engine number is on this tag and the engine number is on the smooth pads of the block just under cylinder #'s 5 & 6, back of engine near the firewall.
