I watched that the other day and was amazed how clean and well thought out the in car camera driver ran that race.  One of the best I've seen.  Very much worth a look.

My mechanic says 2 or 3 turns is irrelevant. You still need verify the color of the spark plug to get the ideal mixture. I have set the rpm on both carbs at 1000 rpm as i have a scheider 274f cam and the engine was upgraded to 2.6l

Have you verified the bore & stroke as well as the upgrade parts listed on the rebuild spec sheet you included in your 1st post or are you tuning based on what you think the engine internals are?  Just curious as I know of a few engines that have been passed off as "rebuilt" with just new paint on the block.
