Black or chrome fender mirrors?

I think it depends on what your other accents are. If you had black fender flares, front air dam, and rear lip spoiler like a lot of guys do then I would say go with black. If they are going to be the only black thing on the car, then go with silver.

Do you have a pic of your car?

The car wont have fender flares but perhaps sometimes in the future an airdam and a 432z rear spoiler. Also going to put 15" rewinds, tokico illuminas and springs, r200 3.9 and the 5 speed from the 280zx on the car, just need some time, all parts laying in my garage.

The colour of the mirror depends on what it's made of. If it's a metal mirror, then it should be chrome/silver, obviously, unless it's made of stainless or aluminium, in which case it's polished. If it has a plastic body, them it should be either flat black (to prevent reflecting of sunlight) or the body colour. Other things like the wiper arms are done similarly, for safety, depending on the age; older vehicles had chrome or polished metal, and modern vehicles have black stuff.

Your car looks great, can't go wrong with either mirrors!

I don't have a Z yet, but I bought a set of used authentic black mirrors, mainly because the black ones are a bit taller which I hear offer slightly more visibility than the chrome ones. Chrome ones are a little shorter in height.
